Asparagus A La Sardegna

Prep Time = 15 mins | Total Time = 25-30 mins | Serves = 6 people

Ingredients

  • 6 BonSavor flour tortillas
  • 12 fresh asparagus spears
  • 3 tablespoons olive oil
  • 7-8 oz of sardines in oil
  • 1 tablespoon butter
  • ½ cup orange juice
  • 1 tablespoon of white wine vinegar
  • 1 cup vegetable stock
  • 1 tablespoon of Dijon mustard
  • 6 sprigs of fresh parsley
  • 1 pinch salt
  • 1 pinch black pepper

Preparation

Wash the asparagus and dry with a paper towel. Melt butter with one tablespoon of olive oil in the pan.  Add the asparagus, salt and pepper and sauté for three minutes.   Add the stock and the orange juice and let simmer for 5 minutes. Place the asparagus in an oven-safe dish, pour the sauce on top and place in an oven pre-heated to 375F for 10 minutes. In a separate bowl, mix the parsley, mustard, vinegar and the remaining oil and mix thoroughly. Remove the asparagus from the oven. Drain the sardines and lay them onto the asparagus and pour the dressing over them. Fold or roll the preparation into the tortillas, serve and enjoy.
