Aztec Tomato Enchiladas

Prep Time = 5 mins | Total Time = 15-20 mins | Serves = 4 people

Ingredients

  • 8 BonSavor corn tortillas
  • 1 can refried beans
  • 1 can plum tomatoes
  • 1 onion, chopped
  • 1 cup sour cream
  • 4 tablespoons of olive oil
  • Dried oregano
  • Pinch of salt & pepper
  • Pinch of garlic powder

Preparation

Fry the chopped onions in a tablespoon of olive oil until brown. Liquefy the can of tomatoes in the blender and add to the onions. Simmer for five minutes. Brush the tortillas with olive oil and heat them until they are flexible. Heat the refried beans in a pan or microwave for 60 seconds. Put two tablespoonfuls of refried beans onto each tortilla and fold into tacos, arranging in a serving dish. Pour the tomato sauce over the tortillas and then drizzle the cream over them. Garnish with grated cheese if you wish. Serve and enjoy.
