Cypriot Pita Sandwich

Prep Time = 8 mins | Total Time = 10-15 mins | Serves = 4 people

Ingredients

  • 4 loaves BonSavor Pita
  • 1 cup hummus*
  • 1 medium sized grated onion or 1 tablespoon of onion powder
  • 2 cloves of garlic, mashed
  • 1 cup of fresh mint, finely chopped
  • 2 tablespoons of lemon juice
  • 2 medium carrots, thinly sliced into strips
  • Pinch of salt and black pepper

Preparation

Mix the hummus with all the ingredients in a bowl and place in the middle of the Pita and fold in half to enjoy.
*To make your own hummus, take 1 can of garbanzos (chickpeas), drain and put in blender with three spoons of olive oil and two full spoonfuls of Tahini paste. Blend and garnish with parsley. If making your own hummus, add 5 minutes to total time.
