Enchiladas Cancun

Prep Time = 15 mins | Total Time = 35-45 mins | Serves = 4 people

Ingredients

  • 8 BonSavor Corn Tortillas
  • ¾ lb of minced beef
  • ½ lb shredded Manchego or Jack cheese
  • 3 medium sized carrots, grated
  • 2 medium onions, grated
  • Small bunch of fresh cilantro, chopped
  • 1 jalapeno finely chopped
  • 2 tablespoons of olive oil
  • Pinch of salt and pepper

Preparation

Fry the onion and minced beef, with salt and pepper, in a large skillet until well cooked. Add a cup of water and the grated carrots and stir in for five minutes. Remove from heat and add the cilantro and jalapeno. Stir well. Spoon the mixture into the tortillas, roll into 8 enchiladas and arrange on a baking dish. Cover with cheese and bake in a pre-heated oven for 15 minutes at 350F.
