Garbanzo Cumin Naan

Prep Time = 15 mins | Total Time = 25-30 mins | Serves = 4 people

Ingredients

  • 4 loaves BonSavor Naan
  • 1 can garbanzos (chickpeas), drained
  • 2 tablespoons of ketchup
  • 1 tablespoon olive oil
  • 2 teaspoons of cumin powder
  • 2 medium sized onions, chopped
  • 1 tablespoon of chopped parsley
  • 2 tomatoes, diced
  • 10 pitted green olives, chopped
  • 1 tablespoon of sugar
  • 1 onion sliced into thin wedges
  • Pinch of salt and black pepper

Preparation

In a medium-sized pan, fry both the chopped and sliced onions in olive oil for five minutes or until tender. Add the ketchup, tomatoes, olives and salt and continue to simmer for another 5 minutes. Add the garbanzos, sugar, cumin and black pepper and stir for two more minutes. Pour into a bowl and garnish with the parsley. Scoop and eat with pieces of naan.
