GREEK PITA QUESADILLA

Prep Time = 8 mins | Total Time = 15-20 mins | Serves = 2 people

Ingredients

  • 2 BonSavor Pitas
  • 6 oz feta cheese, crumbled
  • 1 cup pitted and chopped kalamata olives
  • 1 medium-sized onion, finely sliced
  • 1 medium eggplant, sliced
  • 1 tablespoon olive oil
  • Pinch of salt
  • Pinch of black pepper

Preparation

In a large skillet, sauté the slices of eggplant in the olive oil with a pinch of salt and pepper for 3-4 minutes. Split the pitas in half along the pocket and place the two bottom halves face-up in a separate oven-safe dish. Layer the sautéed eggplant with the slices of onion, olives and feta cheese on top of the pita. Put the top of each pita back on and bake in an oven pre-heated to 325F for 4-5 minutes. Serve and enjoy!
