Ingredients

  • 6 BonSavor flour tortillas
  • 1/2 lb of medium-sized fresh shrimp
  • 5 table spoons of Coconut milk
  • 2 medium-sized diced onions
  • 2 medium-sized carrots in thin strings
  • 1 tablespoon flour
  • 1 tablespoon of hot sauce
  • 1 bunch of fresh chopped cilantro/coriander
  • 1 lemon (only the juice)
  • 2 tablespoons of olive oil
  • Pinch of salt
  • Pinch of black pepper

Preparation

Put the shrimp in a bowl with lemon juice and a pinch of salt; marinade for 20 minutes. In a pan, sauté the chopped onions and carrots in olive oil for 5 to 6 minutes. Drain and add the shrimp; continue sautéing for another 4-5 minutes, until shrimp are firm. Mix the coconut milk and flour and pour into the pan, stirring constantly for 2 more minutes. Remove from the stove and add the hot sauce, black pepper and salt. Immediately top with the cilantro/coriander. Divide into 6 portions, dish onto the tortillas and fold them like tacos. Enjoy.
