Veggie Saute Pockets

Prep Time = 10-15 mins | Total Time = 30 mins | Serves = 4 people

Ingredients

  • 4 BonSavor Pita, cut in half and warmed
  • 1 medium-sized eggplant
  • 1 medium-sized red bell pepper
  • 1 large onion
  • 1 medium-sized zucchini
  • 1 cup of white raisins
  • 2 tablespoons of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 pinch of black pepper
  • 1 pinch of salt
  • 1 pinch of cinnamon

Preparation

Slice all the vegetables into thin wedges. Heat the oil in a large skillet and sauté vegetables for five minutes. Add raisins, salt, pepper, onion powder and garlic powder and stir for another four minutes. Sprinkle with the cinnamon. Fill pita pockets with the vegetables and enjoy warm.
