VERACRUZ FRIED FISH POCKETS

Prep Time = 10 mins | Total Time = 20-25 mins | Serves = 4 people

Ingredients

  • 2 BonSavor pita, cut in half and warmed
  • 2 fish fillets (Sea Bass or Tilapia)
  • 1 medium sized grated onion, or 1 tablespoon of onion powder
  • 2 tablespoons of olive oil
  • 1 cup wheat flour
  • ½ cup diced tomato
  • ½ cup of capers
  • 1 teaspoon of oregano
  • 1 teaspoon of Worcestershire sauce
  • 1 tablespoon of vinegar
  • 1 pinch of salt
  • 1 pinch of black pepper

Preparation

Season the fish with the salt and pepper and dust with the wheat flour. Heat the oil in a non-stick skillet and fry the fish to a golden color. Set aside on a plate or dish. Simmer the other ingredients in a pan for 5 minutes and pour over the fish. Open the pockets and stuff each of them with half a fillet and some sauce. Serve warm and enjoy.
