Salmon Tacos with Chipotle Sauce

Here’s an inventive new way to enjoy salmon: Salmon Tacos with Chipotle Sauce. The secret ingredient? Spinach Garlic wraps! 

Perfect for entertaining, this deceptively easy dish is sure to please. 

 
Salmon Tacos (Serves 4)
 
4 BonSavor Spinach Garlic Wraps
4 – 4 oz. salmon fillets, grilled or broiled, sliced in half length-wise
1 medium red bell pepper, seeded and sliced into strips
1 medium green bell pepper, seeded and sliced into strips
1 medium yellow bell pepper, seeded and sliced into strips
1 tablespoon olive oil
salt and pepper to taste
 
Heat olive oil in skillet and sauté bell peppers for 4 to 5 minutes until peppers just begin to soften. Warm spinach wraps in oven. Place peppers and salmon pieces on wrap and fold up burrito-style. Slice in half. Serve with Chipotle Sauce (recipe below).
 
Chipotle Sauce
 
1 small can of chipotles in adobo sauce
1 cup of mayonnaise
Juice of 1 lime
salt and pepper to taste
 
Place ingredients in blender and puree until smooth. 
 
Optional sides and condiments: salsa, fresh avocado slices, sweet potato fries or refried black beans and rice.
